Chili season is in full throttle — especially at Ryan Dallas Real Estate. We recently had our annual RDRE Chili Cookoff, a tradition we have kept strong over the years. Josh Van Simmons was voted our champion for 2024 and he gave us his winning recipe to share. This recipe is easy, packed with flavor and guaranteed deliciousness!
Ingredients
- 1 lb ground beef
- 1 ld spicy ground sausage
- 1 onion (diced)
- 3 bells peppers (diced)
- 1 jalapeño (diced)
- 28 oz can diced tomatoes
- 3, 8 oz cans tomato sauce
- 1/3 can tomato paste
- Beef broth
- 2 teaspoons olive oil
- 1 1/2 teaspoons garlic powder
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 2 teaspoons smoked paprika
- 2 teaspoons cocoa powder
- 1 1/2 teaspoons salt
- 3/4 teaspoon ground pepper
Instructions
- In a large pot, drizzle olive oil over medium high heat. Add bell peppers, jalapeno, onion and cook for about 5 minutes or until veggies become translucent. Transfer all sauteed vegetables to a bowl and set aside.
- Add the ground beef and spicy ground sausage in the pot, stirring often to break up the sausage and beef, until browned and no longer pink. Drain if necessary. Return the cooked vegetables to the pot.
- Add all the spices to the meat and veggies. Cook, stirring for about a minute, until fragrant.
- Add the diced tomatoes, tomato sauce, tomato paste and a splash of beef broth to the pot. Stir until combined. Bring to a boil, lower to a simmer and cook for an hour, uncovered, stirring occasionally.
- Serve!
